    Fresh Egg Pasta

    List of Ingredients





    3 large eggs
    1 tablespoon olive oil
    1/4 teaspoon salt
    1 1/2 cups all-purpose unbleached flour
    3/4 cup semolina flour

    Recipe



    In a food processor, add eggs, olive oil and salt to work bowl.
    Pulse. Add 1 1/2 cups of the all-purpose and 1/2 cup semolina flour
    and pulse. Add remaining semolina flour until the dough forms a ball.
    Remove from bowl. Knead dough until smooth. Cover with plastic and
    let rest at least 30 minutes before putting through pasta machine.

    Note: To make lemon-flavored pasta, add the zest of 2 lemons and the
    juice of 1 lemon to the food processor when you add the eggs. To make
    dill pasta, add 1 tablespoon of minced dill to the food processor
    when you add the eggs.

    Makes about 2 pounds.
