PASTA ALFREDO WITH BROCCOLI

12 oz. fettuccine
1/2 lb. broccoli florets
1 cup shredded rotisserie chicken
6 oz. herbed cream cheese (boursin cheese)
1/4 cup Parmesan cheese
Recipe
Cook fettuccine in boiling, salted water until al dente, about 12 to 15
minutes. Add broccoli to pasta water during last four minutes of cooking
time.
Shred chicken while pasta cooks. When pasta and broccoli are done, drain, reserving 1/2 cup of the pasta water. Return pasta and broccoli to pan. Add chicken, herbed cheese and reserved pasta water. Stir over low heat until
cheese melts and forms a creamy sauce. Stir in Parmesan cheese. Season with salt and freshly ground pepper.
Makes 4 servings.
