Pasta and Raw Tomato-Fresh Herb Sauce
List of Ingredients
1 1/2 pounds fresh tomatoes, cored and diced
1/4 cup minced fresh herbs (such as mint, basil, parsley, cilantro, oregano
and tarragon)
1 teaspoon minced garlic
1/4 cup extra-virgin olive oil
Salt and pepper, to taste
1 pound penne pasta
Recipe
Combine the tomatoes and herbs in a large bowl. Add garlic and extra-virgin
olive oil. Season with salt and pepper to taste. Set aside.
Bring 4 quarts of salted water to boil in a large pot. Add the pasta and
cook until it is al dente (refer to package directions), then drain. Mix
with tomato sauce and serve.
Garnish with grated Parmesan Reggiano or Pecorino Romano cheese if desired.
