    Spaghetti ala Zucca

    List of Ingredients





    12 ounces spaghetti
    3 tablespoons olive oil
    1 cup (total) zucchini and yellow squash (slice in quarters)
    Salt and pepper, to taste
    2 tablespoons minced garlic
    4 tablespoons chopped fresh chopped basil
    1 teaspoon oregano
    4 tablespoons freshly grated cheese (such as Parmesan)

    Recipe



    Cook spaghetti in salted water.

    In a skillet, heat oil. Once oil is hot, begin to saute the squash and zucchini, sprinkling with salt and pepper. Saute until the vegetables are browned, then lower heat and add the garlic and herbs. Saute for a minute or two, then add the drained spaghetti. Toss together; put on plates and
    sprinkle Parmesan on top.
    Makes about 3-4 servings.
