    Cucumber Cinnamon Sticks

    List of Ingredients





    Let stand 24 hours:
    2 gallons large cucumber sticks (peeled and seeded out and cut up into sticks)
    2 Cups Lime (may be purchased at the lumber yard)
    8 1/2 quarts water

    Drain and wash in clear water. Soak 3 hours in cold water; drain off.

    Simmer 2 hours in:
    1 cup vinegar
    Small bottle red food coloring (1 oz)
    1 tablespoon alum
    Water to cover

    Drain off. Make a syrup of:

    2 cups water
    2 cups vinegar
    10 cups sugar (5 lbs.)
    8 sticks cinnamon
    1 package red hot candy (6 oz.)

    Pour over sticks and let stand overnight. Drain and reheat this syrup for 3 days. Pack in jars and seal.
