    List of Ingredients




    6 skinned and boned chicken breast halves
    1 California avocado, peeled and cubed
    2 (4 ounce) logs goat cheese
    3/4 teaspoon salt, divided
    1/2 teaspoon pepper, divided
    1 cup fine, dry breadcrumbs
    1/2 stick (1/4 cup) Land O’Lakes butter, melted

    Avocado Sauce:

    2 California avocados, peeled and cubed
    3/4 cup half and half
    2 tablespoons Land O’Lakes butter
    1 garlic clove, minced
    3 tablespoons chopped fresh basil
    1/4 teaspoon salt
    1/4 teaspoon pepper
    Place chicken between 2 sheets of heavy-duty plastic wrap and flatten to 1/4 inch thickness using a meat mallet or rolling pin.
    Combine avocado, goat cheese, 1/2 teaspoon salt, and 1/4 teaspoon pepper; mash until smooth.
    Spread mixture evenly over 1 side of chicken.
    Roll up and secure with wooden picks.
    Combine breadcrumbs, remaining 1/4 teaspoon salt, and remaining 1/4 teaspoon pepper in a shallow dish.
    Roll chicken in melted butter; dredge in breadcrumb mixture.
    Place in shallow pan.
    Bake at 350 degrees for 30 minutes or until done.
    Remove wooden picks, and serve with avocado sauce.

    Avocado Sauce Preparation:

    Process avocados and half-and-half in a food processor or blender, stopping to scrape down sides.
    Set aside.
    Melt butter in a small skillet over medium heat.
    Add garlic and sauté for 1 minute.
    Add avocado mixture and cook, stirring often, until thoroughly heated.
    Stir in basil, salt, and pepper.
    Fresh basil to spare is great in Roasted Avocado Soup
