Chicken Saltimbocca

4 boneless skinless chicken breasts
2 eggs, beaten
Flour
seasoned breadcrumbs
oil for sautéing
fresh spinach
4 slices prosciutto
8 slices provolone cheese
3 cups chicken stock
1 cup Marsala wine
1 tablespoon chopped garlic
fresh chopped sage, to taste
1/2 cup sliced mushrooms
2 ounces butter
salt and pepperRecipe
Bread chicken by dipping each piece in eggs, then flour, then bread crumbs. Sauté chicken in a skillet on high heat with oil until just browned. Remove from heat. Top each chicken breast with spinach, a slice of prosciutto and 2 pieces of cheese. Place skillet in oven (or use an oven-safe baking dish) and bake at 350 degrees for 8 to 10 minutes until chicken is fully cooked.
For the sauce, combine stock, wine, garlic and chopped sage in a sauce pan. Bring to a boil, lower the heat to medium high and simmer until mixture is reduced by half. Add the mushrooms and butter, and season to taste with salt and pepper.
