how to make pastrami from brisket

List of Ingredients
Pastrami
4 cups water
5 tablespoons salt
3 whole cloves
2 medium onions, chopped
1 teaspoon saltpeter
1 generous dash red pepper
2 tablespoons brown sugar
4 teaspoons minced parsley
2 teaspoons pickling spice
1/2 teaspoon black pepper
1 3-5-pound brisket, well trimmed
Recipe
Mix all ingredients (except brisket) in the water, then submerge brisket in the marinade. This will need to be turned each day for 10 days. At the end of the 10 days, wrap in a towel to dry for about an hour, then sprinkle with cracked black pepper.
Place brisket on a 200 degree grill and let cook until done, approximately 8-10 hours, depending on the size of the brisket.
