    Bratwurst with warm potato salad

    List of Ingredients





    1 pound red potatoes (unpeeled), cut into bite-size chunks about 1 inch across
    2 teaspoons salt + salt, to taste
    4 large precooked Bratwurst sausages (see Note)
    3 slices of bacon, cut into
    1/2-inch dice
    2 teaspoons vegetable oil
    1/2 onion, chopped
    2 tablespoons white vinegar
    2 teaspoons Dijon or other mustard
    Freshly ground pepper, to taste
    1/2 bunch chives, cut into 1-inch lengths


    Recipe




    Put the potatoes into a saucepan; add just enough water to cover them. Add 2 teaspoons salt, cover and bring to a boil. Reduce heat and simmer, uncovered, until tender, about 6 to 8 minutes.

    Begin heating the sausages. You can fry or grill them, or use a larger pot and more water for the potatoes, and just add the sausages to the water and heat them that way for a few minutes.

    Saute the bacon until crisp, about 3 minutes. Discard the fat in the pan, then add the oil to the pan and heat it slightly. Add the onion and saute for about 4 minutes, until slightly tender. Remove from heat and add the vinegar and 1 teaspoon of the mustard.

    When the potatoes are done, drain them and add them to the pan with the bacon. Stir to coat, then season with salt and pepper. Stir in the remaining 1 teaspoon mustard and the chives.

    Serve with the sausages and some mustard on the side, if you like.

    Serves 4.

    Note: Bratwurst is a traditional German sausage made of veal or pork that often is sold precooked. If you can't find it, substitute any precooked sausage.
