2 lemons, zest removed and juiced
1 orange, zest removed and juiced
1/2 cup bottled or fresh lemon juice
1/2 cup sugar
1/4 cup red wine vinegar
2 tablespoons poppy seeds
1 tablespoon lemon pepper seasoning
2 tablespoons canola oil
Spring mix or baby greens
Garlic flavored croutons or to taste
Recipe
To make dressing, mix lemon zest and juice, orange zest and juice, lemon juice, sugar, wine vinegar, poppy seeds and lemon pepper seasoning in a medium size bowl. Whisk to combine then slowly drizzle in oil, whisking constantly.
To prepare: Put desired amount of greens in a large bowl and drizzle with dressing as desired. Toss to coat evenly. Top each salad with a few croutons. Refrigerate remaining dressing. Makes about 2 cups dressing or enough for about 16 side-dish salads.
