    List of Ingredients





    1 package (6 ounces) baby spinach
    1/2 cup sweetened dried cranberries
    1/2 cup red onion slices
    4 slices bacon, cooked crisp and crumbled
    Dressing:
    1/2 cup honey
    1/2 cup lime juice
    2 tablespoons Dijon mustard

    Recipe



    Wash and dry the baby spinach. Evenly divide the
    spinach on 4 serving plates. Top each with 2
    tablespoons dried cranberries, a few onion slices and
    crumbled bacon.

    In a glass measuring cup, combine all the dressing
    ingredients, whisking to combine. Microwave the
    dressing on high for 1 minute and drizzle over the
    spinach salad. Makes 4 servings.

    Per serving: 247 calories (15 percent from fat), 4 g
    fat (1 g saturated), 53 g carbohydrate, 4 g protein,
    327 mg sodium, 5 mg cholesterol, 64 mg calcium, 2 g
    fiber.
