Fresh Mozzarella & Tomato Salad with Garlic Strips
Ingredients:
3 ounces fresh Mozzarella cheese
6 large, ripe tomatoes
3 cloves of garlic
6 individual, fresh basil leaves
one-quarter cup olive oil
1 tablespoon dried parsley
pinch black pepper
1 loaf of French bread
one-half stick of butter (one-eighth pound)
2 tablespoons garlic powder
paprika, as needed
Recipe
Preparation:
1. Dice fresh Mozzarella cheese and tomatoes.
2. Chop garlic cloves and fresh basil.
3. In a bowl, combine olive oil and black pepper with the cheese, tomatoes, garlic and basil ingredients. Set aside and let marinate in refrigerator for one hour.
4. Slice French loaf lengthwise.
5. Melt butter with garlic powder. Brush slices with butter and sprinkle with paprika. Toast in oven at 350 degrees till golden brown (approximately 12 minutes).
To Serve:
Place tomato mixture in center of platter and garnish around tomatoes with sliced, garlic French bread crisps.
