Hearts of Palm Salad

2 cloves garlic -- lightly crushed with
1 28-ounce can hearts of palm -- drained
1/3 cup best-quality extra virgin olive oil -- or as needed
sea salt -- to taste
1/2 cup finely chopped whites of scallions
Recipe
1. Process garlic to a paste in a food processor. Add hearts of palm and process to a rough purée. With motor running, add oil in a thin stream until mixture comes together in a fluffy, velvety purée.
2. Transfer to a serving bowl. Taste for salt and add a little if desired (some canned brands of hearts of palm have more salt than others). Serve within a few hours, or hold in refrigerator for up to a day. Stir in scallions just before serving.
