List of Ingredients
2 cups dried lentils
2 green onions
2 celery stalks
1 bell pepper, red or green
2 tomatoes
1/4 cup chopped cilantro, or to taste
2 whole pimentos, (canned), diced
1/2 red onion
Salt to taste
Red crushed pepper to taste
1/4 cup fresh squeezed lemon juice
1/2 cup olive oil
Recipe
Prepare lentils according to package directions. Do not overcook lentils.
Dice all ingredients. Mix lemon juice and olive oil together and toss with
all ingredients, including lentils.
