    Maple Baked Beans

    This recipe comes from the New England Culinary Institute.

    List of Ingredients





    2 cups Great Northern Beans (or other medium-size white bean)
    2 tablespoons molasses
    1/2 cup maple syrup
    4 teaspoons dry mustard
    2 bottles (12 ounces each) dark beer
    1/2 pound smoked slab bacon
    1 large onion, peeled, halved
    Water
    1 tablespoon salt

    Recipe



    You will need a bean pot or a covered casserole dish to prepare this recipe. Pick through the beans to remove any small stones, and soak beans in water to cover overnight.

    Preheat oven to 275 degrees.

    Combine molasses, syrup, mustard and beer in bowl. Cut bacon slab in half and place both pieces in bottom of cooking pot. Drain soaking water from beans and discard. Place beans on top of bacon. Add syrup and beer mixture. Add onions and enough water so that beans are covered by liquid by 1 inch.

    Cover pot and bake in preheated oven about 6 hours. Check periodically and add more liquid to cover if needed. Once beans are very tender, remove bacon and set it aside to cool. Stir salt into beans. Dice bacon into 1/2-inch dice and sprinkle on top of beans. Cover again and bake another 30 to 40 minutes. Makes 8 to 10 servings.
