Mediterranean Potato Salad
List of Ingredients
2 1/2 pounds Yukon Gold potatoes
Dressing:
7 ounces extra virgin olive oil
3 ounces red wine vinegar
1 ounce balsamic vinegar
3/4 cup chopped fresh parsley
4 tablespoons capers
1 tablespoon chopped anchovies
1 teaspoon minced garlic
1 teaspoon salt
1/4 teaspoon pepper
Recipe
Cook potatoes in salted water until tender.
In a bowl, mix dressing ingredients.
Drain potatoes. Peel and dice while still hot. Pour dressing over
potatoes and let rest at room temperature before serving or
refrigerate.
