    Parmesan Romaine Salad

    1 large head romaine lettuce, cut into long, thin shreds
    1 garlic clove
    1/4 teaspoon salt
    2 tablespoons Dijon mustard
    2 tablespoons tarragon vinegar
    1/3 to 1/2 cup olive oil
    1/3 cup roasted pine nuts
    1/3 cup finely shredded Parmesan

    Recipe



    Wash romaine and pat dry; refrigerate until serving. Cut romaine just before assembling salad. In wooden salad bowl, mash garlic and rub it over entire inner surface of bowl. In salad bowl, whisk together salt, mustard and vinegar. Add oil in steady stream, whisking until dressing is thickened and does not separate.

    Toss in romaine and nuts; toss well to coat. Serve on individual plates topped with shredded Parmesan. Makes about 6 servings.
