    Prawn Avocado and Mango Salad

    List of Ingredients





    Lettuce, shredded
    3 medium California avocados, peeled, pitted and sliced
    3 mangos, peeled, pitted and sliced
    1 pound cooked prawns
    4 ounces mushrooms, sliced
    Lettuce dressing:
    1 teaspoon grated fresh ginger
    1/4 cup olive oil
    2 tablespoons raspberry vinegar
    1 teaspoon honey
    1 teaspoon seeded mustard
    3 teaspoon lemon juice
    1 tablespoons chopped fresh chives
    1 teaspoon chopped dill

    Recipe



    Shred the lettuce in a small pile in the middle of the individual plates.

    Cut the avocados in half lengthwise, remove stone, remove flesh.

    Cut flesh of the mangos and remove skin. Slice both the avocado and mango, and arrange around the plate. Place the prawns over mango and shrimp. Sliced mushroom and arrange them around the shrimp and mangos.

    Mix all dressing ingredients together. Liberally coat the salad with the dressing.
    Serves 4.
