Remington's Chicken Salad Maison

List of Ingredients
1 tablespoon orange juice concentrate
4 tablespoons mayonnaise
Salt and white pepper to taste
4 cups cooked and diced chicken
2 ribs celery, cleaned and diced
1/2 medium onion, finely diced
1 clove garlic, minced
1 small head iceberg lettuce, cut into thin strips
2 mandarin oranges, peeled, segments separated, or 1 can (11 ounces) mandarin oranges, drained
1 cup toasted cashews
Grapes, strawberries, or any other fresh fruit for garnish
Recipe
Blend orange concentrate and mayonnaise in small bowl. Add salt and pepper. Set aside.
Fold together chicken, celery, onion and garlic. Add to dressing.
To assemble salad, divide lettuce among 6 plates, then place about 2/3 cup of the chicken salad onto the greens. Top with mix of mandarin oranges and cashews. Garnish each serving with fruit as desired. Makes 6 servings.
