    WHITE-BEAN PISTACHIO SALAD VINAIGRETTE

    Makes 4 servings ( 1/2 cup each)

    List of Ingredients





    1 can (15 ounces) white beans, drained, rinsed (1 1/2 cups)
    2 cups sliced celery
    1/2 cup diced red onion
    1/3 cup shelled pistachios, coarsely chopped
    1 teaspoon ground black pepper
    2 tablespoons fresh thyme leaves or 1 1/2 teaspoons dried thyme
    1 teaspoon dried tarragon
    1/3 cup white wine vinegar
    2 tablespoons sugar
    Salad greens

    Recipe



    Combine all ingredients except salad greens; toss well. Cover and chill for
    1 or 2 hours to allow flavors to blend. Serve on beds of salad greens.
