Watermelon & Goat Cheese Salad

Note: Spread hazelnuts on a baking sheet. Toast 10 minutes in a 300° oven.

1 1/2 pounds seedless red watermelon
1 1/2 pounds seedless yellow watermelon
6 ounces fresh goat cheese, cut into cubes or crumbled
1/2 cup hazelnuts, toasted (see Note) and chopped
8 fresh mint leaves, julienned
4 tablespoons extra virgin olive oil + more to taste

Red and yellow watermelon together make a colorful salad, but you can use just one kind if you like. From Foreign Cinema.
Cut rinds off watermelons, leaving fruit intact. Slice melons into 1-inch-thick slices. Cut slices into long fingers or triangles. Place watermelon on a chilled platter. Intermingle goat cheese with melon pieces. Sprinkle hazelnuts, mint, olive oil and salt over the top.
