    4 skinless, boneless chicken breasts (7 ounces each)
    1 cup seasoned powdered chicken breading, such as Oven Fry
    1/4 cup buttermilk mixed with 1/4 cup whole milk
    1 cup Japanese-style bread crumbs (see note)
    Oil to fry chicken
    4 sesame topped egg buns, sliced
    1/2 cup roasted garlic mayonnaise (see recipe)
    Shredded lettuce
    4 tomato slices
    4 pickle spears

    Coat chicken breast in powdered breading, then dip into buttermilk. Dip into Japanese bread crumbs. Fry in oil heated to 350 degrees until meat reaches internal temperature of 165 degrees.

    While chicken is cooking, toast buns. When chicken is done, remove from oil and drain on paper toweling.

    To assemble, top the top half of the bun with roasted garlic mayonnaise,lettuce, tomato slice and pickle. Place chicken on bottom half of bun.Assemble and serve with fries, five-bean salad or coleslaw.
    Makes 4 servings.

    Note: Japanese-style bread crumbs, also called panko, can be found in the Asian or Oriental food aisle of some supermarkets.
