    Crab Bisque is a luxurious dish, rich with butter and silken with cream. If you can't take the calories, increase the broth, swap olive oil for butter, omit the cream and add a dash of dry marsala for a quite different soup.

    List of Ingredients





    1 quart vegetable or chicken broth
    1 carrot, shredded
    1 onion, chopped
    2 stalks celery, chopped
    2 tablespoons butter
    2 tablespoons whole wheat pastry flour or white flour
    1/2 teaspoon kosher or sea salt
    2 cups cooked crab meat
    1 cup heavy cream
    1/2 teaspoon freshly ground black pepper
    4 tablespoons flat Italian parsley, stemmed

    Recipe



    In a saucepan, combine broth, carrot, onion and celery. Cook over medium high heat until vegetables are tender. Puree in food processor, set aside.

    In the saucepan, melt the butter over medium heat. Add flour and salt, stirring constantly until blended. Cook until mixture is bubbly and flour begins to brown (3-5 minutes).

    Stir in puree and simmer over medium until hot through. Add crab meat and cream and heat through. Serve at once, garnished with pepper and parsley.
