    Fresh Herb Tomato Soup

    List of Ingredients





    1 tablespoon unsalted butter
    1/2 cup chopped onion
    1/2 cup chopped green pepper
    1 stalk celery, strings removed and sliced
    1 clove garlic, crushed
    3 cups peeled and chopped fresh tomatoes
    1 teaspoon basil or dill
    1 can (14 ounces) low-sodium chicken broth
    2 tablespoons chopped fresh parsley, preferably Italian flat leaf parsley
    1 1/2 teaspoons red wine vinegar

    Recipe



    In a 3-quart saucepan, melt butter and add onion, green pepper, celery and garlic. Saute until vegetables are soft but not brown, about 5 minutes.
    Add chopped tomatoes (including tomato juice), basil or dill, broth and parsley; simmer 10 minutes.
    Soup may be served as is or cooled and pureed in a blender or food processor.
    Makes 4 servings.
    Per serving: 86 calories, 3 grams protein, 11 grams carbohydrate, 3 grams fiber, 5 grams fat, 8 milligrams cholesterol, 40 milligrams sodium.
