    2 1/2 cups chopped onions
    6 tablespoons butter
    1 pound mushrooms, sliced
    3/4 cup dry white wine
    3 tablespoons dried dill
    1 1/4 tablespoons sweet paprika
    1 1/2 tablespoon soy sauce
    1 tablespoon Worcestershire
    4 tablespoons flour
    1 1/2 cups whole milk
    2 1/2 cups chicken broth
    6 to 8 ounces Brie (rind removed, cut into cubes)
    1/2 cup pine nuts

    Recipe



    Preparation: In a saucepan, cook onion in 3 tablespoons butter until soft. Add the mushrooms, wine, dill, paprika, soy sauce and Worcestershire sauce. Simmer the mixture for 15 minutes, stirring occasionally. In another saucepan, melt remaining butter over medium heat, stir in the flour and cook the roux over low heat for 3 minutes, stirring constantly. Remove the pan from the heat and whisk in the milk. Return to heat and cook over medium/low heat until the mixture is thickened. Add the mushroom mixture to the milk mixture, stir in the chicken broth and simmer 15 to 20 minutes, stirring occasionally. Turn heat to very low. Add cubed Brie. Stir with wooden spoon until melted (approximately 2 minutes). Remove from heat, stir in sour cream and season with salt and ground pepper. Garnish with pine nuts. Serves 8.
