    Rinaldo's Beef Vegetable Soup

    List of Ingredients




    8 oz. Lean beef, cut into 1-inch cubes
    1 cup water
    3 Tablespoons olive oil
    2 Tablespoons beef bouillon
    1/2 teaspoon sugar
    1 teaspoon pepper
    1/2 teaspoon whiter pepper
    1/2 teaspoon salt
    Group 2: 3 cups hot beef broth
    2 large onions, each quartered
    2 celery stalks, diced
    2 large carrots, cut into 1/2 inch slices
    2 large tomatoes, each quartered
    1 (8-oz.) can kidney beans
    1 large garlic, diced
    1 teaspoon paprika
    1/2 teaspoon crushed red pepper
    1/2 teaspoon sage
    1/2 teaspoon thyme
    1/2 teaspoon oregano
    1 teaspoon parsley flakes
    Group 3: 15 green beans, cut into halves
    Group 4: 2 Tablespoons Parmesan cheese, grated
    Combine Group 1.

    Mix well. Heat to boil at "Medium High". Boil 1-2 minutes. Reset heat to "Medium Low", cover, and simmer 30 minutes. Mix occasionally. Remove cover, reset heat to "Medium", and evaporate to sizzling. Cover and let self sautŽ 2 minutes. Mix occasionally. Add Group 2, mix, reset heat to "Medium Low", and simmer 30 minutes. Add Group 3, mix well, and simmer 2 minutes. Garnish with Group 4 and serve. Add 1/2 to 1 cup hot water to pot for more sauce, if needed.
