Ultimate Onion Soup
List of Ingredients
4 medium Walla Walla Sweet Onions, thinly sliced into rings
1/4 pound unsalted butter
1 tablespoon sugar
4 tablespoons plus 1 teaspoon flour
4 cups concentrated, unsalted chicken broth
6 1/2 cups water
1 1/2 cups dry white wine
1 1/2 teaspoons onion powder
1/2 teaspoon black pepper
2 teaspoons lemon juice
1/2 tablespoon saffron
1 1/2 tablespoons beef bouillon powder
3 tablespoons cognac
Gruyere cheese, finely grated
toasted french bread rounds
fresh basil leaves
4 green olives with pimentos, sliced
Recipe
Separate onion rings and saute them in butter, uncovered, over low
heat in a large pot. Add sugar and continue to saute, stirring
frequently until golden brown. Add flour and cook over medium heat
for one more minute, stirring often (do not burn).
Add chicken stock and 4 cups water and the white wine. Bring to a
boil and reduce heat to a gentle simmer. Add onion powder, pepper and
beef bouillon.
Simmer for 30 minutes, stirring as needed.
Add lemon juice and saffron, and simmer 15 minutes more. Add
additional 2 cups water, increasing heat to medium. Cook 15 more
minutes. Taste and adjust seasoning. If needed, add more beef
bouillon to enrich and salt.
Add cognac, and simmer 30 seconds.
Ladle soup into ovenproof bowls and top with toasted french bread
rounds under a mound of finely grated gruyere. Broil until cheese is
melted and slightly golden brown. Remove and garnish with fresh basil
leaves and sliced olives.
Serves four.
