    World's best clam chowder

    List of Ingredients





    1/4 lb bacon
    2 tbsp butter
    1 cup sifted flour (all purpose)
    Milk
    1 cup sweet (or Videlia) onions (diced)
    3 small potatoes (diced, cooked)
    9oz can of corn
    2 4oz cans of minced clams
    HVP, chicken flavored (boullion)
    Salt and Pepper to taste

    Directions:
    Slice bacon into squares, and cook in 10" skillet. Remove the bacon, but leave the grease. Fry onions until translucent, remove from pan, and again, leave the grease. Add butter to bacon fat, and create a roux with flour ( a good cookbook will tell you how to do this--essentially a bechemel sauce).

    Cook over medium heat for 10-12 minutes and add milk until desired consistency .

    Place contents into large pot and combine with potatoes, corn, clams (drained), onions and bacon.

    Add 2-3 tbsp HVP and add salt and pepper to taste.

    Cook over medium heat for 10-15 minutes, or until flavors have 'married'.
