Yesterday's Cream of Baked Potato Soup

CREAM OF BAKED POTATO SOUP
1 tablespoon butter
1/2 cup diced uncooked bacon
1 cup chopped onion
1/4 cup chopped celery
8 to 12 ounces diced cooked sausage, ham or beef
4 cups chicken broth
5 baked potatoes with skin
2 whole carrots, peeled
2 cups heavy cream
1/4 teaspoon dried marjoram
Salt
Ground black pepper
Fresh parsley sprigs or chopped chives, for garnish
Shredded Cheddar , for garnish
Recipe
Melt butter in a large saucepan over medium-high heat. Add bacon and onion; saute until golden brown. Add celery and sausage; cook, stirring frequently, for 5 minutes. Stir in chicken broth; bring mixture to a boil.
Meanwhile, grind or finely shred potatoes and carrots. Add to boiling broth. Return mixture to a boil. Add cream and marjoram. Season with salt and pepper to taste. Serve in bowls. Garnish with parsley and cheese.
Yield: 6 servings.
