    List of Ingredients






    Basic U.S. of A. Steak Rub
    1 1/2 tablespoons kosher salt

    2 tablespoons coarsely ground black pepper
    2 tablespoons sweet paprika
    1 tablespoon granulated onion
    1 tablespoon granulated garlic
    1 tablespoon oregano leaves
    2 teaspoons ground cumin

    Combine all ingredients and store in an airtight container. To use: Rub the seasoning blend on a steak and grill, or use it to season beans, rices, grains or vegetables.

    Jammin' Jamaican Spice Blend
    Makes about 1/2 cup

    2 tablespoons sweet paprika
    2 tablespoons ground cumin
    1 tablespoon coarsely ground black pepper
    1 teaspoon granulated onion
    1 teaspoon granulated garlic
    1 tablespoon basil leaves
    1/2 tablespoon ground allspice
    1/2 tablespoon ground ginger
    1/4 teaspoon ground cayenne pepper

    Combine all ingredients and store in an airtight container. To use: Rub seasoning blend on meat or use as the base of a marinade.

    Chai is a soothing tea blend from India. It is available at many gourmet stores, but you can make your own for less. Miller packages the chai blend with a jar of black tea and herbal honeys in a holiday gift basket. Buy cardamom, cinnamon and dried ginger in bulk at health food stores.


    Cup of Chai
    Makes about 3 cups chai tea blend

    1 cup green cardamom pods
    1 cup chopped cinnamon
    1 cup chopped dried ginger
    1/4 cup dried orange peel
    1/4 cup whole cloves
    1 tablespoon whole black peppercorns

    Combine ingredients. Store in an airtight container.

    To use: Measure 1 heaping tablespoon per cup of water and simmer 20 minutes. Turn off heat, add 1 teaspoon of your favorite black tea; steep 5 to 10 minutes. Strain and sweeten to taste with honey and milk.


    Spiced Olives
    Makes 8 to 10 ounces

    1 jar (8 to 10 ounces) good quality pimento stuffed olives
    8 to 10 whole cloves
    4 to 5 cloves garlic, sliced
    1/2 teaspoon dried dill weed
    1/4 teaspoon red pepper flakes

    Pour olives and liquid into a saucepan. Add all of the other ingredients. Bring just to a boil. Pour entire mixture back into the olive jar. Keeps refrigerated six to eight weeks.

    Rosemary is the herb of remembrance. It is fragrant like pine. In earlier times, boughs of rosemary were strewn on church floors. When people walked on them, the scent of rosemary filled the church. This recipe is from "Easy Grilling Simple Smoking With the BBQ Queens" by Adler and Fertig.


    Rosemary Rub
    Makes about 1/2 cup

    3 tablespoons dried rosemary
    3 tablespoons dried oregano
    2 teaspoons lemon pepper
    1 teaspoon garlic powder

    Combine all ingredients and store in a glass jar. Rub into meat before grilling. Perfect for lamb.
