Baked Squash

Recipe Introduction
This squash is similar to the kind served at the Black-Eyed Pea restaurant.
List of Ingredients
5 pounds yellow squash
2 eggs, beaten
4 ounces butter
1/2 cup sugar
2 teaspoons chopped onion
1 1/2 teaspoons salt
1 teaspoon pepper
1 cup bread crumbsRecipe
Cut squash in pieces. Steam 6 to 8 minutes, drain and mash. Combine with eggs, butter, sugar, onion and seasonings. Spoon into lightly greased 3-quart casserole. Sprinkle with bread crumbs. Bake at 350 degrees F for 20 to 25 minutes. Yield: 10 servings.
