    Source of Recipe

    from: The Graduate Student Cookbook

    Recipe Introduction

now you can be as strong as Popeye
and get to eat heavy cream with your vegetables!

    List of Ingredients

20 oz fresh or frozen spinach
If the spinach is fresh, pick off the larger stems and wash out the sand and dirt. In a pot sufficiently huge to hold all that spinach, bring 2 c water to a rapid boil. Add spinach. Simmer, covered, for about 20 minutes. Drain; blend or chop.

That was the long part. Indeed, if you're using frozen spinach this is really quick. Just thaw it by setting the box in hot water for a few minutes.
    oil about 2-4 Tbls
    chopped onion (optional)
    1 T flour
    1/2 c pine nuts
    1/2 c cream
    1 tsp sugar
    salt
    black pepper

    Recipe

Heat oil over medium heat in skillet, add onion. Cook for 1 minute or until golden. Stir in flour. Add pine nuts. Slowly stir in cream and add sugar. Add spinach; stir and cook for 3 minutes. Add salt and pepper to taste.
