Squash Casserole
List of Ingredients
3 pounds yellow squash or zucchini
3 eggs, lightly beaten
1 cup finely chopped onion
1 tablespoon sugar
Salt and pepper, to taste
1 stick butter
Bread crumbs
Recipe
Boil squash until tender; drain. Mash with potato masher. Mix in eggs, onion, sugar, salt, pepper and half of the stick of butter. Stir until butter is melted. Pour into casserole.
Melt remaining butter and drizzle over squash. Sprinkle with enough bread crumbs to cover the casserole. Bake at 350 degrees for 30-45 minutes.
Makes 6-8 servings.
