Ruth Chris' Steak House Creamed Spinach

1 ( 10-ounce ) package frozen chopped spinach
2 tablespoons butter
1 1/2 tablespoons flour
1/2 cup heavy cream
1/4 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon nutmeg
1/8 teaspoon cayenne pepperRecipe
Cook spinach following directions on package. Drain and squeeze all liquid from spinach when it's done.
Melt butter in saucepan over medium heat. Be careful not to burn it. Add flour to melted butter and stir until smooth.
Add cream and heat 2 to 3 minutes or until sauce thickens. Stir constantly so that sauce does not burn.
Add spinach, salt, pepper, nutmeg and cayenne. Cook for 2 to 4 minutes, stirring often. Serve hot. Makes 4 servings.
