    Tuna Stuffed Eggs

    List of Ingredients





    4 hard-cooked eggs ,peeled and halved lengthwise
    1 small can tuna in oil, drained
    3 tbs. mayonnaise
    1 tbs pickle relish
    1 tbs minced sweet onion
    1 tbs minced fresh flat-leaf parsley
    Kosher salt and freshly ground black pepper
    Garnish: Whole parsley sprigs

    Carefully remove yolk from the whites. Place the whites cut side up on a plate. With the back of a spoon, press the yolks through a sieve into a small bowl or mash them in a bowl with a fork. Add the tuna, mayonnaise,relish, onion, parsley and salt and pepper to taste. Mash with a fork until blended. Taste and add more salt or pepper, if desired.
    Using a teaspoon, carefully stuff the egg whites with the yolk mixture, mounding the tops. Garnish each stuffed egg with a sprig of parsley.

    Serves: 8
