Zucchini Pancakes

List of Ingredients
3 Large or 6 Small Zucchinis
1 Tbsp. Cold Butter
1 Cooked Red Potato
1 Egg
1/2 Onion Grated
1/2 Cup Flour Recipe
Begin by using the mandoline to make Zucchini julienne or spagetti. Place the zucchini into a bowl, followed by some grated cooked potato. Now add some onion, but be sure to mash it up as much as possible. Add one egg and the flour and hand mix until it comes together.
Add the butter to the sautee pan, and place small pancakes into the pan. Pan-fry the zucchini cakes on both sides. Drain the fat when done, and serve hot! Season with salt and pepper
