Crisp Pickle Slice

Recipe Introduction
These are the old fashioned "Bread and Butter" type pickles. I keep a supply of these all the time. They are my favorite.
List of Ingredients
- 4 quarts cucumber slices
- 6 medium white only slices
- 2 small green peppers, chopped
- 3 cloves garlic
- 1/3 cup salt, coarsely ground
- 3 cups cider vinegar
- 1-1/2 teaspoons turmeric
- 1-1/2 teaspoons celery seed
- 2 tablespoons mustard seed
Instructions
- Place sliced cucumbers in a large glass bowl, add sliced onions, peppers, whole garlic and salt.
- Cover with cracked ice.
- Mix thoroughly.
- Let stand for 3 hours.
- Drain well.
- Combine remaining ingredients, pour over cucumbers.
- Heat just to a boil.
- Seal in hot sterilized jars.
- Process in hot water bath for 5 minutes.
- Yield: 8 pints
Final Comments
Note:
DO NOT PARE CUCUMBERS - SLICE THIN
When processing start timing when water returns to boiling. Always use clean hot, sterilized jars and lids.
