Recipe Introduction
This recipe was given to grandmother by her cousin Mary Hinson.
List of Ingredients
- 1 egg
- 2 Tablespoons lemon juice
- 1/4 cup oil
- 1/2 teaspoon mustard powder
- 3/4 teaspoon salt
- 1/4 teaspoon pepper (optional)
- 3/4 cup vegetable oil
Instructions
- combine egg, lemon juice, 1/4 cup oil, mustard, salt and pepper in blender.
- Blend at low speed until mixed.
- Increase speed to high, uncover center cup and add remaining 3/4 cup oil in a thin, slow, steady stream.
- Blend until all oil is added and mayonnaise is smooth and creamy.
- Refrigerate

Yield:
1 cup
Note:
Use fresh lemons for juice, not reconstituted lemon juice.
Use more mustard to suit your taste.
