    Recipe Introduction


    This recipe was given to grandmother by her cousin Mary Hinson.


    List of Ingredients


    • 1 egg
    • 2 Tablespoons lemon juice
    • 1/4 cup oil
    • 1/2 teaspoon mustard powder
    • 3/4 teaspoon salt
    • 1/4 teaspoon pepper (optional)
    • 3/4 cup vegetable oil


    Instructions


    1. combine egg, lemon juice, 1/4 cup oil, mustard, salt and pepper in blender.
    2. Blend at low speed until mixed.
    3. Increase speed to high, uncover center cup and add remaining 3/4 cup oil in a thin, slow, steady stream.
    4. Blend until all oil is added and mayonnaise is smooth and creamy.
    5. Refrigerate

    Yield:
    1 cup
    Note:
    Use fresh lemons for juice, not reconstituted lemon juice.
    Use more mustard to suit your taste.
