List of Ingredients
- 2-1/2 cups peach slices, drained
- 1/4 cup peach syrup
- 1-1/2 teaspoons lemon juice
- 1/2 teaspoon lemon juice
- 1/2 teaspoon lemon rind, grated
- 1/2 teaspoon almond extract
- 1 cup flour, sifted
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/4 cup shortening
- 1 egg, beaten
- 1/3 cup peach syrup
- 2 Tablespoons sugar
Instructions
- Arrange peaches in a greased 8x8x2 inch pan, and sprinkle with mixture of 1/4 c. syrup, lemon juice, lemon rind and almond extract.
- Heat in oven for 5 minutes.
- Sift together flour, baking powder and salt.
- Cut in shortening until mixture looks like corn meal; then stir in beaten egg and 1/3 c. syrup, stirring just until dry ingredients are moist.
- Drop by Tablespoonfuls over peaches, and spread together with a spatula.
- Sprinkle with sugar.
- Bake at 400 degrees for 30 minutes.
