    List of Ingredients


    • 3 eggs
    • 1-1/4 cups oil
    • 2 cups sugar
    • 2-1/2 cups flour, self-rising
    • 2 apples, peeled, cored and diced
    • 1 cup coconut shreds
    • 1 cup walnuts, chopped


    Instructions


    1. Grease and flour tube pan, preheat oven to 350 degrees
    2. Blend eggs, oil and sugar until creamy
    3. Add flour-a little at a time
    4. Blend well
    5. Batter will be stiff, fold in apples, coconut and nuts
    6. Pour into tube pan
    7. Bake 1 hour
    8. Let cool 30 minutes
    9. Remove from pan, top warm cake with icing
