    Serves: 6 (4 pcs. each)
    Prep. time: 15 munutes, plus potato baking time

    List of Ingredients




    6 large potatoes, baked
    4 ounces natural butter sub., such as Molly McButter or Butter-Buds, mixed with 1/4 c. hot tap water or use 1/4 c. low fat or fat free butter, melted
    Black Pepper

    Recipe



    Cut baked potatoes in half length-wise and scoop out the inside, leaving a 1/4-inch shell. Reserve the insides of the potatoes for another use. (such as the mashed potatoes needed to make Shephard's Pie)

    Cut each potato in half lengthwise, again.

    Coat the inside of each shell with the butter substitute or melted butter and sprinkle with black pepper.

    Broil 6 inches from the heat for 5 minutes or until the skins have browned.

    Variation: After the potatoes have been under the broiler for 3 minutes, sprinkle the potatoes with grated non-fat or low-fat cheese. Return to the broiler until the cheese melts. You could also add a few bacon bits.
