Blueberry Cheese Muffins

1/4 c. creamed cottage cheese
1 egg or egg sub. equiv.
3/4 c. sifted flour
1/2 t. salt
1 1/4 t. baking powder
1/3 c. skim milk
2 T. sugar
1 c. fresh blueberries (or thawed frozen blueberries)Recipe
Preheat the oven to moderately hot, 425 degrees.
In a bowl beat the cottage cheese and egg together.
Stir flour, salt, and baking powder together and add to cheese-egg mixture. Add the milk and the sugar and stir lightly.
Gently stir in the blueberries. Spoon the mixture into muffin paper cups or nonstick muffin tins sprayed with cooking spray and bake for 16 to 18 minutes.
