List of Ingredients
1 small carton egg substitute (4 eggs)
1/4 t. prepared mustard
fresh ground pepper to taste
3/4 cup any combination chopped onions, tomatoes, and peppers
low-fat cheese (to your taste)
4 6-inch flour tortillas, at room temperature
Recipe
Spray a nonstick skillet with a small amount of vegetable spray.
Add the egg substitute or 4 eggs, spices, and vegetables, and cook over medium heat as you would scrambled eggs, stirring frequently to prevent sticking, about four minutes.
Divide the mixture equally over the tortillas, top with cheese, and roll up. Wrap each tortilla in a paper towel and microwave on high for thirty seconds. Serve with hot sauce if desired.
