    Yield: 8 pancakes

    List of Ingredients




    2 cups corn kernels
    2 eggs, beaten (can use egg sub.)
    2 T. butter or margarine, melted (I use low fat)
    1/2 t. salt
    2 T. milk
    1/2 cup plus 2 T. all-purpose flour

    Recipe



    Combine corn and eggs; add butter and salt. Mix well. Stir in milk and flour, blending well.

    For each pancake, pour 1/4 cup batter onto a hot, sprayed with cooking spray or non-stick, griddle or skillet. Turn pancakes when tops are covered with bubbles and edges are browned.
