Scrambled Eggs in a Pan

List of Ingredients
2 c. cubed russet potato (1 large)
1 small yellow or white onion, chopped
1/2 c. finely chopped red or green bell pepper
4 slices nonfat ham, cut in strips
Salt and pepper to taste
3 large egg whites or egg sub. equal to one egg
2 T. skim milk (or evaporated skim milk)Recipe
Preheat oven to 350 degrees.
Saute' potato cubes in a sprayed nonstick pan. When potato cubes are golden brown, add onion and pepper. Saute' until onion is translucent. Remove from heat. Add strips of ham, salt and pepper.
In a small bowl, beat egg and milk until slightly frothy. Coat a 9-inch round glass pan with nonstick cooking spray. Place vegetables and ham on bottom and pour egg mixture over.
Bake for 12 to 15 minutes.
