Wake Up Pizza

Recipe Introduction
Serves: 4
List of Ingredients
1 thin pizza crust or 2 individual pizza crusts
2 c. nonfat or low fat shredded cheese (your favorite)
6 hard boiled eggs, chopped coarsely; remove yolks if you want to reduce your fat and cholesterol
1 c. crumbled cooked turkey, ham, bacon, chicken, or low-fat canadian bacon
1 c. cooked potatoes (can use leftover baked potatoes) in 1/2-inch cubes
Salt and pepper to taste
2 T. finely chopped parsley (2 t. if dried)
2 T. finely chopped scallions (2 t. if dried)Recipe
Preheat oven to 450 degrees.
Place pizza shell on baking sheet. Place on shell in order:
1 c. cheese, eggs, meat, potatoes, remaining cup of cheese, salt and pepper. Bake for 15 minutes. Scatter parsley and scallions on top and cut pizza into wedges.
Variation: Use leftover beans, olives, corn, peppers, taco meat, jalapenos and salsa for Mexican Pizza. Garnish with nonfat sour cream.
