    Carrot Cake

    Recipe Introduction

    applesauce takes the place of oil in this or any baked goods recipe for a fat-free alternative to oil.

    List of Ingredients

    2/3 c. sugar
    1 c. flour
    1 t. baking soda
    1 t. cinnamon
    1/2 t. salt
    1 t. vanilla
    1/3 c. or a little less applesauce (unsweetened preferred)
    2 eggs or egg sub. equiv.
    1 1/2 c. grated carrots

    Recipe

    Preheat the oven to moderate, 350 degrees.

    Combine the dry ingredients and add the vanilla, applesauce and eggs, beating until well combined.

    Add the grated carrots.

    Bake the cake in a 9-inch round nonstick pan for about 45 minutes, or until a toothpick inserted in the center comes out clean.
