List of Ingredients
1/4 c. chopped onion
1/4 c. canned diced green chiles
6 oz. (1 1/2 c.) shredded jack cheese (or use more mozz.)
2 oz. (1/2 c.) shredded low-fat mozzarella cheese
6 slices whole wheat (or your favorite) bread
2 T. Dijon-style mustard
3 c. evaporated skim milk
Dash salt and pepper
4 eggs, lightly beaten or egg sub. equiv.
Recipe
Preheat oven to 350 degrees.
In bowl, toss onion, green chiles and cheese.
Spread bread with mustard and cut into 1" squares.
In 2 qt. baking dish, layer bread and cheese mixture alternately, ending with cheese.
Combine milk, salt, pepper and eggs. Pour over cheese and bread.
Press bread lightly into liquid to moisten.
Stand baking dish in pan containing 1" hot water.
Bake 1 hour, or until knife inserted near center comes out clean.
