Chicken & Tortilla Casserole

Recipe Introduction
Serves: 8 - Baked, Low-Fat or Fat-Free tortilla chips may be substituted for the corn tortillas.
List of Ingredients
8 corn tortillas or tortilla chips
1 c. canned stewed tomatoes or salsa
1 cup non-fat sour cream or 1 c. plain non-fat yogurt
1 can (3 1/2 oz. to 4 oz.) diced green chiles (the mild are not hot at all, they just add flavor)
1 T. chili powder
2-3 cloves garlic, minced or mashed
1 small onion, finely chopped
3 c. diced cooked chicken or turkey
2 c. grated nonfat or low-fat cheddar cheese
Recipe
Preheat oven to 350 degrees.
If using corn tortillas, place them on oven rack and heat until crisp.
Combine tomatoes, sour cream/yogurt, chiles, chili powder, garlic and onion. (this is the "sauce")
Place half of toasted tortillas (or a layer of chips) in the bottom of a 9 X 13-inch shallow casserole pan that has been lightly coated with nonstick cooking spray. Cover with a layer of "sauce", then chicken and finally cheese. Repeat layers, ending with cheese.
Bake uncovered 25 to 30 minutes.
