Mexican Rice Casserole

List of Ingredients
1 1/2 c. uncooked rice
Nonstick spray
1 t. olive oil
1 c. chopped onion
1 garlic clove, minced
1/2 c. chopped celery
1/2 c. chopped green pepper
3/4 lb. lean ground beef or veggie burger
1 (4 oz.) can green chilies (mild), drained and chopped
1 t. basil
3/4 t. salt
1/2 t. black pepper
1 (15 oz.) can red beans, rinsed and drained
1 (15 oz.) can Hunt's tomato sauce, diluted with 1/2 c. brothRecipe
Preheat oven to 350 degrees.
Cook rice according to package directions. Spray baking dish (8 X 8) and set aside.
Heat oil in nonstick pot and saute' onions until soft. Add garlic, celery, and green pepper and cook a few minutes longer. Add ground beef and green chilies and cook until meat changes color (or not frozen any longer if veggie burger). Add basil, salt, pepper, beans and half of the tomato sauce mixture. Cook until blended together.
Spread half of the rice in a baking dish. Cover with meat mixture. Cover meat mixture with balance of rice and pour remaining tomato mixture over all. Bake in 350 degree oven for 30 to 45 minutes.
